Super spicy soup

IMG_5606Spicy, healthy, delicious, this is all I have to say about this soup

This is one of the recipes I have been very sceptical about. A friend showed me the recipe of Heidi Swanson spicy green soup, at Food52 and told me she tried in the weekend and loved it. My answer was “sounds nice”, just for the sake of being polite. I had no intention to try it, but one day while preparing gnocchi with homemade pesto I added to much pasta water to the sauce and ended up with a soup instead of a sauce. When I tasted it, I was surprised. It was a spicy, fresh and crunchy soup. A crunchy soup, that sounds odd.

It reminded me the spicy soup recipe I went through some weeks ago, so I decided to try it.

I made lots of changes, to satisfy my taste, but the essence is the same, blend lots of greens in a blender, add water, nuts and any other ingredient you like and enjoy a bowl of beautiful, delicious and super-healthy soup.

Time : 30 min

Serving size : 4 persons

Ingredients

  • 1 cup spinach leaves
  • 1 cup mint leaves
  • 1 cup basil leaves
  • 1 bunch of parsley
  • 1/2 cup toasted almonds chopped
  • 3 tbs olive oil
  • 50 g Parmigiano cheese
  • 3 tbs flour
  • 4 cups water
  • Salt
  • Pepper
  • Lemon juice

Directions

Bring the water to simmer in a medium pot.

Put all greens in the mixer and blend until a smooth sauce is created. If you need, add some tablespoons of water, so it is blended more easily.

Add the chopped almonds and blend again. At the end add olive oil and grated cheese and blend again for few seconds.

At the moment the water starts simmering remove it from the heat. Take 1/2 cup of water and add it to the green mixture, add also 3 tbs of flour. Mix well and then pour this mixture in the water. Mix well again and put it in medium heat until starts simmering again and thickens a little bit.

Add salt, pepper and lemon juice according to your taste.

Enjoy.
