Homemade basil pesto recipe

September 23, 2015 By Mandarina Leave a Comment

PestoPesto is definitely my favourite sauce. I love it on pasta, sandwiches or as a salad dressing. It is healthy, tasty and takes only 5 minutes to prepare.

Preparation time : 5 min

Serving size : 2-3 persons

Ingredients

  • 2 hands full basil
  • ½ cup toasted pine nuts ( you may use toasted almonds as a substitute)
  • 50 gr shredded parmesan cheese
  • 3-4 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Optional: 1-2 tablespoons lemon juice

Note : 1 cup – a standard cup of 240 ml

Pulse all the ingredients, except parmesan in a food processor. Turn out into a bowl add the parmesan and adjust for salt and pepper to taste. If You like add 1-2 tablespoons lemon juice at the end.

Welcome to Mandarina Yum!

mmMy name is Ejona Varangu and I am a full time researcher in the telecommunication industry, and part time food blogger. I blog from a small apartment in Tirana, Albania, where I live with my better half and our two cats Weirdo and Pixel.

I started cooking in late 2013, when I decided to live alone, and I missed the great homemade dishes that my mum prepared, before that, I couldn’t even boil an egg by myself. Little by little I started experimenting with new ingredients and techniques and I loved every single minute of it. Find out more…
