Asparagus & trout pasta
Life is so fast since I moved here in Dublin, and I’m loving every minute of it. But, this also has its cost, less time for my favorite activity, cooking for my family ?
When in a hurry pasta comes to help, so today I’m sharing with you a simple and delicious dish that I mixed by pure serendipity, without giving it much thought. It’s pasta with asparagus & trout fillet, but you may choose to replace asparagus with your favorite vegetable and trout with your favorite fish.

Ingredients

  • Pasta for 4 persons
  • 4 trout fillet (approximately 100 g each)
  • 250 g asparagus
  • 1 tbsp olive oil
  • 50 g butter
  • 50 g parmesan
  • Salt
  • Pepper
  • 1 tbsp of freshly squeezed lemon juice (optional)

Instructions

This dish is very easy and quick to make. Ideally you should boil the pasta while cooking the asparagus.
  1. Clean the asparagus and cut it in bite size pieces.
  2. Cut the trout fillet in strips or bite size pieces also.
  3. Put a big pot with water to a boil.
  4. Once it starts to boil add the pasta and 1 tbs salt.
  5. Mix well at let it boil as per the package instructions.
  6. Meanwhile sautee the asparagus with 1 tbsp olive oil over medium-high heat for 2-3 minutes.
  7. Add the fish bites and lemon juice and saute for another 2-3 minutes, making sure the fish is cooked, but is still soft and juicy.
  8. By this time the pasta should be ready.
  9. Drain and add the pasta to the pan.
  10. Season with salt and pepper, add the butter and cheese and mix well.
Enjoy warm.
