Spinach & strawberries salad

I am a huge salad fan. They’re easy to make, colourful, tasty, healthy, and leave so much room for your imagination while making them.

I try to add salad at lunch and dinner, apart the main dish, or sometimes transform the salad into a main dish itself by adding grains, beans, seeds and nuts etc.

My current obsession is a mix of spinach, lettuce, strawberries and radishes. Then I add some seeds, almonds and raisins, and end up with this beauty. I can’t have enough of it.

Preparation time : 5 min

Serving size : 2 persons

Ingredients 

Salad

  • 1 hand full of lettuce
  • 1 hand full of fresh spinach
  • 50 g mozzarella
  • 5-7 strawberries
  • 1 radish
  • 1 tbs raisins
  • 1 tbs toasted almond flakes
  • 1 tbs seeds (sunflower seeds, flax-seeds, sesame seeds)

Salad dressing

 Option 1 

  • 2 tbs olive oil
  • 1 tbs lemon juice
  • Salt to taste
  • Pepper to taste

Option 2

  • 1 tbs tahini
  • 1/2 tbs honey
  • 1 tbs lemon
  • Salt to taste
  • Pepper to taste

Option 3

  • 1 tbs olive oil
  • 1 tsp balsamic vinegar
  • Salt to taste
  • Pepper to taste

Directions

Chop the lettuce and spinach by hand.

Cut strawberries and mozzarella into small pieces and add them to the salad mix.

Slice the radishes and also add to the salad.

Prepare the salad dressing by mixing all the ingredients together in a small jar and pour it over salad making sure that it dresses all the greens.

Finally add the almonds, seeds and raisins.
