I am a huge salad fan. They’re easy to make, colorful, tasty, healthy, and you can have so much fun experimenting with them.
I try to have salads at lunch and dinner, apart from the main dish, or sometimes transform the salad into a main dish itself by adding grains, beans, seeds and nuts etc.
My current obsession is a mix of spinach, blood orange and strawberries. Then I add some seeds and almonds, and end up with this beauty. I can’t have enough of it.
I play with dressings a lot, that’s why you have 4 options here, the choice is yours.
Spinach & strawberry salad
Ingredients
Salad
- 2 hands full of fresh spinach
- 20 g Parmesan
- 5-7 strawberries
- 1 blood orange
- 2 tbs toasted almond flakes
- 1 tbs seeds (sunflower seeds, flax-seeds, sesame seeds, chia seeds)
Salad dressing
Option 1
- 2 tbsp olive oil
- 1 tbs lemon juice
- Salt
- Pepper
Option 2
- 2 tbsp olive oil
- 1 tsp tahini
- 1/2 tsp honey
- 1 tbs lemon
- Salt
- Pepper
Option 3
- 1 tbs olive oil
- 1 tsp balsamic vinegar
- Salt
- Pepper
Option 4
- 2 tbsp blood orange juice
- 1/2 tsp mustard
- 1 tbsp olive oil
- Salt
- Pepper
Instructions
- Chop the spinach by hand.
- Cut strawberries and blood orange into small pieces and add them to the salad mix.
- Prepare the salad dressing by mixing all the ingredients together in a small jar and pour it over salad making sure that it dresses all the greens.
- Finally add Parmesan, almonds and seeds.
