Whenever you need a quick dessert that will satisfy everyone this cheesecake is the choice. It is slightly sweet with a nice lemon flavour and pairs perfectly with jam or fresh fruits.
The best part is you don’t need to switch the oven, so there you have the perfect dessert for summer days.
Serving size: 10 persons
- 350 g Gran Cereal biscuits (or other biscuits of choice)
- 100 gr butter, melted
- 500 gr mascarpone at room temperature
- The juice and zest of 1 lemon
- 1 package vanilla sugar or 1 tsp vanilla extract
- 200 ml sweetened condensed milk
Melt the butter and set aside.
Put biscuits in a large plastic bag, and crush them using a food processor, or a rolling pin until very fine crumbs form.
Pour crumbs into a medium bowl and stir in butter, until well combined.
You may choose to prepare individual cheesecakes, or a whole cheesecake that serves 10-12 persons.
Depending on your choice, press the crumb mixture into a 24 cm spring-form pan and press flat, or add the cookie crumbs in glasses or jars and press them with the back of a spoon.
Use an electric mixer at medium speed to beat the cream cheese in a large bowl until smooth.
Beat in the lemon juice, lemon zest, sweetened condensed milk and vanilla.
Pour the filling over the crust and smooth the top with a rubber spatula.
Cover with plastic wrap, and refrigerate until firm, ideally overnight, or for a minimum of 3 hours.
Enjoy with fresh fruits or jam.
